The handle is at the physiological angle and feel to the anatomy of the hand customized. That means it is angled a little upwards. (Can be seen very clearly in the video)

und hat einen ganz speziellen Schliff.
Der sogenannte "S" SChliff . DIeser Schliff verhindert das lästige Anhaften von Lebensmitteln wärend des schneidens, wie es jeder kennt. Auch bei hochwertigsten Damast Messern ist dieser Schliff meist nicht vorhanden.
Der Griff ist im physiologischen Winkel und Haptik an die Anatomie der Hand angepasst. Das heißt er ist etwas nach oben angewinkelt. ( Im Video sehr gut ersichtlich)
Somit ist schneiden von Gemüse, Fleisch, Wurst ,Brot und Käse etca. eine Freude .
